Beans contain carbohydrate, protein and a large amount of fiber. They are excellent agents for reducing blood cholesterol. Beans and other legumes have low glycemic indeces, which help regulate blood sugar levels, something of great importance for diabetics. Their protease inhibitors may play a role in lowering the risks of pancreatic cancer; their phytoestrogens in preventing breast cancer; the folic acid, lung cancer; and their pectins, colon cancer.
